Are the cuts standard or can I customize my beef order?

When ordering a quarter beef the farmers and butchers choose your cuts for you.  When ordering a side of beef you have the option to request customized cuts from the butcher. All of our beef is butchered at K and K Meat Processing in Richland, MO.
